Steam-fried eggs

Today I wanted to make something quick and easy for my New Year's brunch.

Found this recipe from the cook book called Healthy food by Lesley Waters

"Steam-fried eggs
serves 4
a little olive oil
4 eggs
handful of small basil leaves
freshly ground black pepper
4 slices of wholemeal bread, toasted

1. heat a large non-stick frying pan until very hot, then carefully wipe with kitchen paper dipped in oil.
2. crack the eggs into the pan, spacing them apart, and reduce the heat to low. cover with a lid, so they start to steam, and cook for about 4 minutes for soft eggs, or flip over for a minute if you prefer a firm set yolk.
3. season with black pepper and scatter over a little basil. serve on toast.

a healthy fried egg, cooked in the minimum of oil, makes a tasty nourishing breakfast that will keep you sustained through to lunch."
